Wales lies in the southwest of Great Britain and is surrounded by the sea on three sides. The high mountains inland force clouds from the sea onto the land, regularly releasing their rain on the Welsh mountain slopes and down into the lowlands. The mineral-rich soil and the rain result in lush, protein-rich grass and a variety of herbs that provide a staple food for lambs and sheep. Wales has a long tradition of lamb farming, and between eleven and fifteen million sheep graze on the evergreen Welsh pastures each year – up to five times the country's population.

It's not just the centuries-old knowledge of farmers about breeding the right animals, but also the free-range grazing on fresh grass and herbs that makes the lamb's meat particularly tender and mildly aromatic. The Welsh know this too; nowhere else will you find more recipes for lamb and mutton. And that's a good thing, because the lean meat is very healthy! Feed additives, antibiotics, and genetically modified feed are prohibited, and the meat itself is rich in protein, vitamins, and minerals.
