The meat of the German Heifer, the German heifer, is already making the hearts of many die-hard steak lovers beat faster, and rightly so!
Due to their slower growth, heifers don't develop the same massive amount of meat as other cattle. The meat of a heifer has a fine grain and marbling, which contributes to a really flavorful steak!
It goes without saying that our finest cuts of dry-aged beef come exclusively from German heifers. Because only a top-quality starting product can deliver the best results!
German Heifer: Premium quality for your Dry Ager!
When selecting our beef ribeyes for dry aging, we pay close attention to the animals' age: The heifers should have been raised in species-appropriate conditions for at least 40 months before slaughter. At this age, the marbling and fat cap of the meat provide ideal conditions for dry aging!
But not all beef rumps make it into our shop! Every week, our experienced butchers select only the best cuts from several hundred rumps for our Prime Selection! This way, you can be sure of getting the best quality for your dry aging process and later on your plate!

Our preparation recommendation:
For an optimal taste experience, we recommend dry-aging the German Heifer beef sirloin for 4–6 weeks at a time.
