This aromatic hard cheese is allowed to mature for 6-7 months on wooden boards in the family's own cheese cellar, developing its delicate flavor. Like all cheeses from Ferdl's Cheese Factory, this mountain cheese is made exclusively from non-GMO hay milk. The medium-strength mountain cheese is a particular treat when paired with full-bodied white wines or sweet red wines.
Bregenzerwald mountain cheese 'spicy' (450g)

Emmental cheese (200g)
Emmentaler is distinguished by its large holes. Natural fermentation during the 2-3 month ripening period of the cheese wheel, which can weigh up to 90 kg, produces carbon dioxide gas that collects in various places within the cheese and cannot escape. This is how the famous holes are formed! Like all cheeses from Ferdl's Cheese Shop, Emmentaler is made exclusively from non-GMO hay milk from the Alps. This Spätzle cheese blend packs a real punch, making for wonderfully flavorful and aromatic Spätzle! While the exact proportions are confidential, the cheeses themselves are no secret: medium and spicy Bregenzerwald mountain cheese, Bregenzerwald Räßkäse, and Bregenzerwald Emmentaler!
