Tuber melanosporum, the Périgord truffle, is 3-8 cm in size and roundish, but irregularly shaped. It is deep black and easily recognizable as a truffle due to its wart-like protrusions. When cut open, the Périgord reveals its black interior, crisscrossed with fine white veins. The black winter truffle is particularly well-known in French cuisine. Its aroma is multifaceted: a blend of forest and earthy notes with musk and a delicate sweetness.

Truffle Care - How do I handle my truffles correctly?
If you pay attention to a few simple points, you will definitely enjoy your truffles and be able to savor them to the fullest:
1. Cleaning is half the fun!
Just before eating your truffles, remove any dirt by gently cleaning them with a brush under running, cold water and drying them with a paper towel.
2. Store in a cool, dry place!
The best way to store truffles is to wrap them in a clean paper towel, vacuum-seal them, and keep them in the refrigerator (not the freezer!). This optimally preserves their aroma and prevents mold growth. Alternatively, you can simply wrap the truffles in a paper towel and store them in the refrigerator, but you should change the paper towel daily to prolong their shelf life.
3. Consume as fresh as possible!
Even with the best storage conditions, the aroma gradually diminishes!
