Iberico pork should be well-known among gourmets by now. These small, agile, dark-colored pigs are free-range in southwestern Spain, meaning they truly have a pig's life! But what does Bellota quality mean? We'll explain!
Spanish Iberian pigs aren't simply kept free-range on any old meadows—quite the opposite! Bellota-quality Iberico pork comes from animals that roam year-round in the so-called dehesas: cork and holm oak groves. There, the animals diligently graze on acorns, which gives the meat its characteristic nutty flavor. The 'Bellota' designation is only awarded to meat from animals that have achieved approximately 40% of their live weight through acorns and herbs found in these meadows. If the pigs are fed only acorns, the Bellota designation cannot be used.
But it's not just the feed that makes this delicacy so special! Because the animals can move freely, they develop strong muscles and finely marbled, lean meat that makes every connoisseur's mouth water.
