SmartAging®
This unique technology is only available with your DRY AGER® aging cabinet! It allows you to age meat, ham, cheese, pasta and much more at the touch of a button: simple, safe, and fantastic!
Precise parameters
Dry Agers electronically control and maintain temperatures from 0 to +30 °C and humidity levels between 40 and 90%. This can be done automatically with the SmartAging® programs or in manual mode.
Absolute purity
Dangerous bacteria and germs have no chance in the Dry Ager models. They feature an active UVC disinfection box that completely disinfects the entire air mass in the ripening cabinet at least once per minute. The integrated activated carbon filter further purifies the incoming air.
Minimal weight loss
After 4 weeks of dry-aging on the bone, beef loses only about 7-8% of its weight, and after 6 weeks, about 12%. These values are unparalleled in the dry-aging sector!
