The Alps have much to offer: towering peaks and idyllic valleys. The clean mountain air and natural surroundings are not only beneficial to us humans, but also to the Simmental cattle, a breed that has been raised and kept in the German and Austrian Alps for centuries, which benefit from the exceptionally good conditions of alpine pasture farming.
Simmental cattle originate from Switzerland, specifically from the Simmental valley in the Bernese Oberland. Traditionally, this breed was a dual-purpose breed, meaning it was used for both meat and milk production. This advantage made the Simmental cattle very popular, and so this large breed was introduced to Germany and Austria in the mid-19th century. Nowadays, Simmental cattle are primarily used for meat production, as the high milk yield of the cows makes them an excellent choice for a purebred beef breed.
The animals whose meat we sell have excellent genetics, and even if not all of our cattle graze in the Alps, the outstanding qualities of this breed are preserved. Our selected, small farms, from which we source our Simmental cattle, operate according to the highest quality standards (QS standard) to guarantee you the characteristic Simmental taste experience!
Simmental beef has a slightly coarser texture than US beef. It boasts fine marbling and a wonderfully nutty flavor. The exceptional quality of Simmental beef is likely due in part to the cattle's natural husbandry: from spring to autumn, they graze on lush meadows, feeding not only on rich, green grass but also on wild herbs. The meadows also provide ample space for movement, which undoubtedly benefits the meat quality. This high-quality feed and the semi-wild lifestyle give Simmental beef its extraordinarily flavorful and aromatic character.
